They contain a poisonous alkaloid that can cause violent diarrhoea and other, more serious, symptoms. Uncooked or green potatoes and raw potato peelings are all toxic.
Once cooked, the alkaloid is destroyed, making the potato safe to eat.

The more ions there are in the salt bridge, the faster the reaction, which brings us to the original question. Core cabbage and slice into wedges. 2. Peel and slice potatoes into medium chunks 3. Peel and chop onion Bring chicken base and water to a boil in a 4-qt. pot. Add carrots and simmer 10 minutes. Layer potatoes then cabbage on top of carrots. Sprinkle with caraway, salt and pepper. Add onion, kielbasa and apple slices on top. Cook 30-45 minutes or until all vegetables are tender. This recipe is requested more than any other dish I have ever taken to pot-luck suppers. Hope you like it!

I don't know if we can definitively answer the first question, because mashed potatoes are so basic. Potatoes are native to the Americas. I don't know if the native peoples mashed their potatoes or cooked them in some other fashion, but I do know that potatoes weren't introduced to Europe until Europeans conquered the Americas. The people in South America had already domesticated the potato by then. It seems reasonable to suppose that they might have boiled their potatoes, and sometimes mashed them, but I don't know if there is any evidence to prove that they did.
