If you prefer it a little less bloody then turn the heat down to about halfway, and do 'em for about 4-5 minutes or so on each side. Before I cook a steak, I like to tenderize them with a tenderizer (like a small hammer with little points on it). Bechamel is made as follows:
Sautee 1/2 a chopped onion in 2 tablespoons butter. Add 2 tablespoons butter and 2 tablespoons flour, stir until smooth. Add 1/2 to one cup milk a little at a time cook until thickened. Add more milk to thin it down as desired.
Season the sauce with a pinch of salt and a pinch of nutmeg, and stir. Strain out any lumps, and onions.
To make cream of onion soup from this add sauteed onions to it and thin with milk.
Veloute sauce is made almost the same way substituting half the milk with chicken stock, adding a pinch of pepper instead of nutmeg.
