The actual "cause" of allergies is one of those mysterious subjects. People can have allergies to all kinds of things and there doesn't seem to be any particular reason other than a common familial tendency toward allergies. Family members don't often share the same allergies, but they share a TENDENCY toward allergies. The mother might be allergic to nuts and the daughter might be allergic to eggs. Allergy to gluten is usually specific to the type of grain, often wheat gluten. You might be able to tolerate other grains, like rye, oat or rice. Often these types of food alergies can subside after several years. Good luck.

No, there is no gluten in potato. However, for people strictly avoiding gluten, for processed foods you may need to check for cross-contamination with gluten. Traces can creep in during the manufacturing process, particularly on shared manufacturing lines. Also note that some french fries are made with a wheat (gluten-containing) coating. Other fried products may be cooked in oil that is used for gluten-containing products.

Thickeners in the 1400 -- 1450 range are made from starch and therefore may be derived from wheat. If wheat derived, thickeners contain very small levels of detectable gluten, and so are considered not gluten free. If derived from maize, potato, tapioca or rice then they are gluten free. Thickeners may also be called modified starch or dextrins (thickener 1400). If the source of the thickener is wheat (or another gluten-containing grain), then it should be avoided on a gluten free diet.

Lupus is an autoimmune condition and gluten/gliadin free diets have been clinically shown to help patients with autoimmune conditions.

Celiac disease (aka - hypersensitivity to wheat protein gluten) can present at any age from 6 months to 80 years old. This ailment does have a wide spectrum of gastrointestinal and extraintestinal manifestations: diarrhea, poor weight gain, bloated stomach, foul-smelling stools, abdominal pain, short for size, dental defects, skin rashes, mouth ulcers, & irritability. There are other salient symptoms that may be present, too. The cure is rather straight-forward: a gluten free diet.

Maize, i.e. corn, is gluten free, but maize flour, i.e. corn flour or corn meal might not be. Wheat flour is commonly added to corn flour and corn meal to enhance its binding quality for baking. Be sure to check the package to ensure that it says "Gluten-free." If it does not say that, check the ingredients to see if any wheat or wheat by-products have been added.

If you are only allergic to peanuts (and not tree nuts) like I am, that means you can technically eat many raw types of nuts. However, the issue is that many nuts are made in facilities with peanuts, so always ask at restaurants or read labels in the store.

If you are in the US, the ONLY two kinds of nuts I've found that are 100% safe to eat with my allergy (that are in my grocery store anyway) are:

1. Wonderful brand pistachios

2. Blue Diamond brand almonds

No, there is no known cure for Celiac Disease. There are however ongoing studies for different therapies. Some show some real promise but this may be three, five or ten years down the road. The ONLY treatment for this disease is to go on a strict Gluten Free diet. That means no wheat, barley, Rye or Oats (Oats are safe but only from a certified Gluten free manufacturer and only after having been on a gluten free diet for six months).

There is no cheating once on the diet.. to cheat even once a month would seriously setback ones healing of the small intestine.

Current research:

nexpep is supposed to start clinical trials of its vaccine therapy 2008.

albatherapeutics is almost into phase III of AT-1001, which will enable Celiacs to eat out without fear of cross contamination, but won't let you eat gluten like a slice of pizza. Studies are showing better results than anticipated and who knows, maybe it will allow someone to have a cheat day now an then? The premise is that Celiacs have leaky guts, by closing the leak the gluten peptide is unable to cause an autoimmune response which causes the damage to the small intestine.

alvinepharma is starting phase I this year on its EP-B2, which is a peptide prolease that is supposed to rapidly consume gluten peptide and like "pac man" break its acid chain down small enough that the body no longer recognizes the gluten as an enemy. Studies so far indicate that it too will only limit cross contamination issues, but it may do more? Testing will take at least five years.

Finally...

There is other enzyme therapies being explored in Europe, particularly Holland. This holds greater promise as the enzyme is supposed to like hostile acid environments, its already being manufactured for industrial uses so its cheap to produce. This enzyme is so strong that the early reports are that no gluten remains after taking the treatment. So far its been tested in a lab and on some dogs... again, it will take years for anyone to get this fully tested.

There you have it.. other than research to show what else this horrible disease causes there seems to be little other interest by the medical community on a whole... no money in cures only in pills...

Another form of the question may be, "Can celiac disease cause alcoholism?". I strongly believe this to be the case. Through personal experience and what I've read from others, alcoholism is often apparent long before a Celiac diagnosis. Celiacs who ingest gluten while unaware of the disease may experience extreme anxiety and depression due to neurotoxins in the blood. Alcohol can provide a temporary escape from the unexplained physical and mental symptoms that result. This gives the impression that Celiac may have been caused by alcohol, when in fact, it is the other way around.

having celiac myself and only a teen i was surprised when i found out i had celiac. the most common things you cant eat are wheat, rye, flour, barley, and (depending on your sensitivity) oats. preservatives include BHT, EDTA etc.

common foods are: bread, pizza, pastries, cookies, cakes, rolls, certain cereals, pasta and muffins.
