If the vinegar is a very minor ingredient there shouldn't be a problem. Rice vinegar has a flavor and aroma note of its own, so if it is a primary flavoring you should not substitute. Combining three parts white vinegar with one part dry sherry could be done in a pinch.

How many grains of rice is in 10ml?

Rice isn't the best of things to measure by the mil (since mils are usually reserved for liquid measurements). Grain size varies a lot between rice types and within rice types (Arborio rice is much wider but shorter than long grain rice). An approximation would be around 50-60 grains in 10 ml, but you would be better off finding a different unit of measurement - preferably a unit that measures weight, such as grams or ounces. Volume measures, such as teaspoons may also work for you.

Does dried rice kill birds?

No, rice is a natural food grain and birds are well adapted to dealing with it wet or dry.

Birds do not have teeth, all that they peck is swallowed and ground up in a special organ that birds have, called the "gizzard." They eat sand with their food and this sand is used in their gizzards to grind the food.

When the bird fills itself with seeds, they are stored in the birds "crop" a sack that comes before the gizzard (in the crop the food does not get wet).

Thus the unprocessed food does not go into the birds stomach all in one go, it has to go through the crop and gizzard first. For this reason birds can process dry grains without harm.

Why is there a higher ratio of liquid to rice in paella?

If you are making paella with an appropriate rice, i.e., bomba or callaspara rice from the Valencia region of Spain, these types of rice absorb more liquid than ordinary rice. And of course, this is what makes paella so good. The rice can absorb far more flavorful liquid than other rices, so the paella tastes better.
