I hate to be the bearer of bad news but, the most probable cause would be a blown head gasket. Has the engine ever been overheated at any point? This will usually cause this problem. The mechanic should carefully look over the engine block to make sure there are no cracks in the cylinder walls, and check the cylinder head for cracks and warpage. The head gasket seats between the block and the head. There are 2 heads on your engine. If the block is cracked, then you will need a short block, and recommend rebuilt heads as well. Make sure they look it over really good, and I also recommend a new radiator cap, and thermostat. This is the most common cause of overheating.

it could also be bad intake gaskets on the 3.1, I had the same problem with oil in coolant, so I changed intake gaskets, flushed out system, put in new thermotat that was 3 months ago, and the car is still fine. no more oil in coolant!!

Intake gaskets on the 3.1 and 3.4 GM engines are the primary cause of coolant in the oil (just did my brother's today). He didn't overheat his so the head gaskets were ok. Had to change the oil three times before stopped looking like choclate milk. Used the LIS48500 Push rod tool to make the job easier.

actually never, it is not an easy task, you are always taking some risk, if the system is over 7 years old it is best to rework the system. flush all old oil out , change bearing in clutch seal in front of compressor , all system seals, then refill with fresh oil and freon. as a quick remedy add freon with oil and dye and sealer mix, then pray. if you continue on though and too much oil accumulates then compressor will blow, if too little oil it will sieze and destroy system leaving a 1,200 bill to restore

You might have a blown head gasket or your engine block is cracked.

Edit to add; The white smoke is steam. That means that your coolant got into your cylinders. A blown head gasket is the most likely cause, but a cracked engine block or warped aluminum heads are possibilities.

By testing the fans, did you bypass directly to battery and they came on? Make sure you replaced the fan relays, not beleived to be. If all else fails and they come one by direct battery contact, bypass the relays and connect them direct to turn on with the ignition on.

Raise front of vehicle at least 6 inches. Crawl under on you back about dead centre of the wheels. Looking up on the aluminum engine block, you will see some round frost plug holes about 1 and one half inch in diameter. One of the wholes has a red colored plastic sending unit in it with a wire attached to it. Immediately below it is a 14mm plug. Unscrew the plug, you will need a long breaker bar because it is in really tight.

You cannot change the coolant just using the radiator drain, because you will only get out 2 litres.

No need. Just drain the radiator and after adding the coolant just run the engine and add till full. I recommend getting non diluted coolant for the simple fact that it costs the same as the diluted mixture, so essentially your getting twice as much.
