Pre-baked frozen cookies can be left out to defrost at room temperature.
Frozen cookie dough may or may not need to be thawed at all depending on the type of cookie you're baking. 'Rolled and Sliced' or 'Freezer' cookies are meant to be sliced and baked right from the freezer. You might give the dough 5 or 10 minutes to defrost at room temperature for easier slicing, but no more than that is really needed.
Frozen drop cookies, like oatmeal or chocolate chip, that have already been formed into 'drops' don't really need defrosting either, but you may have to adjust your baking time and temperature. Generally I reduce my temperature by 25 degrees and bake 3 - 7 minutes longer with much success. Keep an eye on them and remove from oven when the tops of the cookies are no longer glossy.
Frozen cookie dough sold in buckets generally have defrosting directions on the label, but 30 - 45 minutes at room temperature should soften the dough sufficiently to scoop onto baking sheet. Bake according to manufacturer's suggestion.

Cut pork into small pieces. Heat oil in large stock pot. Sear pork and season with salt and black pepper.

In a small pot, boil the chiles with just enough water to cover. Once tender, about 10-15 min.,put chiles in blender, water and all, add one clove of garlic, cumin and 1 tsp oregano.
Blend until smooth consistency. Add the Chile paste to the simmering pork. Then add the hominy, include the water from the can. If necessary add water to desired consistency.
Salt and pepper to taste. Simmer until pork is tender and juicy and broth has thickened slightly.
Serve fresh lemon along with diced onion, chopped jalapeños, shredded cabbage, a little fresh chopped cilantro and corn tortillas.

What could cause mashed potatoes to stink?
Bacteria. Specifically S.pyogenes. This bacteria is present in the environment, and loves to grow on the starch in potatoes and rice. Don't leave your potatoes out of the fridge uncovred for too long, and definitely do not eat potatoes that have been in the fridge for more than a week. i won't even eat refrigerated mashed potatoes after 3 days.
Other bacteria will also infest mashed potatoes if you put dairy in it, and the dairy will sour just as milk does after staying in the fridge for too long. No more than three days storage for potatoes with dairy. When you reheat do it in the oven or stove top. reheating potatoes in the microwave typically does not keep them hot enough for long enough to kill the bacteria.
The good news is majority of the "food poisoning" you would get from typical potato bacterias would only last 12-24 hours...
Once it has been tempered and set again, if stored properly, chocolate will last for a few weeks.

That depends on what you're substituting it in. If its baking, I wouldn't do it. Heavy cream has a much higher fat content, and will throw off a baking recipe. You'll just end up with a richer tasting, smoother end product with better mouth feel, that's all.
