Must have damaged a spark plug or mixed up the firing order during replacement. Check the code(s) and you may find a P0300 thru P0308 which will help determine what cylinder is misfiring.

I believe you have a Type 2 DIS ignition system (three coils on a V6 engine or 2 coils on a 4-cyl.) To remove a coil with Type 2 DIS, first remove the two spark plug wires, then the two bolts. I believe the head of the bolts is 5.5mm but it might be 7mm. My mind is a bit foggy from old age.

A faulty IAC will cause stalling problems at idle. Most of the time if you hold the gas pedal down it will run fine. Be careful because these symptoms can come from an EGR valve that is stuck open aswell. If you have a fast idle i would look for a intake leak.

Several things can cause your car to cut off while driving. Run a computer check for possible bad codes to see what may show up as a cause.

On a 1996 Plymouth Breeze, the crankshaft sensor can be found above the oil filter. It should be accessible without having to remove any other parts.

Well, if you were messing with the coil pack, and if the Ignition Control Module is actually inside the coils, then the signal from the crankshaft position sensor will be fed to it, so that it knows when to fire. You may have knocked off that sensor plugin by accident. A vehicle will not fire without a crankshaft position sensor. A camshaft position sensor is a different story though. Since your car is a 1999, you should be able to cycle the key on, crank the engine, cycle key off, cycle on/off, and on the third time, your engine will start with no camshaft sensor. I would get a spark tester though if I were you and I would see if any spark plugs are firing at all. If there is zero firing, then its more then likely your CKP (Crankshaft sensor)

Yes, it could be dirty injectors causing this problem. It could also be an issue in the fuel line, fuel pump or fuel filter.

The defroster is drawing more electrical current than the alternator can produce. It could be that the belt is slipping and the battery is margianally low so that when you turn on the defroster the alternator can't keep up and the battery isn't able to provide enough current to keep the ignition operating.

The Idle control air valve on Highlanders, and other Toyota models, and other makes and models of vehicles, becomes dirty. On my Highlander, the dirty valve caused the vehicle to sometimes fail to idle on its own until it warmed up. My research shows that most of the time these valves don't need to be replaced, they just need to be cleaned. If you can locate yours, and have decent mechanical skills, you can clean it and save the cost the dealer would charge to replace one.
