If so, you might not be getting enough air into the computer. First try cleaning the throttle body. If this helps, you're OK. If that doesn't help, have someone repeatedly tap of the throttle body very fast with a screwdriver handle as you switch the blower motor off. If that prevents the stalling, replace the IAC. Also, try removing the IAC from the car without unplugging it. Have someone turn the key on and off repeatedly. The plunger should extend and retract just a bit as they turn the key. If it keeps extending and never retracts, replace it.

There are some very quick checks to fix this. I found that my car was running very rich (lots of gas and exhaust but no get up and go). I replaced everything! Hopefully I can save you some time and money. First find the air intake sensor, it should be between your filter and the throttle along the air intake hose. Disconnect it. Try your car now. Mine turned into a formula one race car after this step alone - of course by this time I had replaced the fuel filter, fuel pump, air filter, fuel regulator, O2 sensors and fuel injectors. Now it's worth keeping.

Change your air filter, your fuel filter, put in a bottle of Valvoline Synthetic Fuel Cleaner and change spark plugs. If your Envoy has done 100k miles on the same spark plug wires, change those too. Use only OEM wires. Also change your emmissions equipment, such as the EGR valve, PCV valve, O2 sensor and breather filter. Why would an engine suddenly knock very loud and then stall out?
A loud knock is usually associated with a rod bearing. The rod connects the crankshaft to the piston. If a rod bearing went out, possibly from an oil pump going bad, it would stall out the motor.
There are some seals and gaskets in the engine that may be worn out. This can result in loss of compression. I had my mechanic take apart the engine and replace all the seals where oil was leaking, and this noticeably increased accelleration and made it sound better. You may be using the wrong oil, or you don't have enough oil in it. (Don't use the internet to determine how much oil it takes. I made that mistake. Different versions take different amounts.) When my mechanic put in the wrong oil (5W50 synthetic) my 1990 N/A sounded like an old pinto after driving a bit, though it started up smoothly.

I had the same problem with a Chevy cavalier. Diagnostics did nothing for me an at a cost of 500 + dollars I chose to go with the obvious. After driving a 15 to 30 minutes car would shut down an not crank and run for about 1 hour. I changed coil packs an ignition module. the ecm is behind the glove box. take it down and replace the prom. the prom is behind a plate held on by two screws.I have fixed two cars like yours by changing the prom.
