Buy thickened cream, as this whips faster. Put it in a bowl & add a pinch of bicarbonate of soda (as this also helps it whip faster), & a little sugar or icing sugar(to taste). Beat until just thick - watch carefully as it will quickly turn to butter if you don't stop as soon as it is thick. Because of this it is better to use a hand beater than an electric one, as you can keep a better eye on the thickening.

My cheesecake recipes calls for 3 tbs cornstarch. What can I substitute instead?

You can substitute twice the amount of flour for the amount of cornstarch called for in most recipes. So you would use 6 tablespoons of flour, but use plain flour and not self rising.

Pepper jelly did not set how can you fix it?

I think the pH of the hot peppers (acidic) makes the pepper jelly require more Certo/SureGel than ordinary fruit jelly. This is the second batch I made and it was too thin both times. Had to reprocess the last batch and basically double the SureGel. I'll probably do the same on this batch, but not quite double the pectin.
