I have been researching this for a while and with the exception of a few states (California seems to be one), there is no such thing as a mythical "buyer's remorse law" when it comes to automotive sales. Once you sign the papers and the vehicle has been registered in your name and you take it off the lot, it is now officially your property, or the property of your lien holder. This is why you MUST be very careful with your decision making in purchasing a vehicle. Now many reputable dealers will consider reversing the deal depending on your situation, providing that you don't give some BS story to them that they can see right through. (Not all car salesman are heartless, scam artists as popularly perceived.) However, even if they will take the car back, you should be prepared to take a hefty loss for the car is deemed used and therefore depreciates in value. First, the "you can return a car within 3 days" is pretty much a myth. No state actually allows this in all cases, though in some states it's allowed in certain specificcases.
The best advice is to look at the sale contract and see if there's a recission period. If not, your best hope is to call the dealer and see if you can make some kind of deal.

Chris, my hammies are also flexibility-impaired, to they point where my 2000 Accord feels like the seat surface is two inches off the floor and the pedals are tucked under the dash somewhere, so I've been looking for a comfier car, preferably smaller (in addition to getting into better stretching habits). I have had no luck finding this "floor to seat height" nor cabin "floor to ceiling" height information on the internet, it doesn't seem to be a thing that EPA requires ratings on nor that car reviewers regularly notice. So I've had to do my own testing. Observations: The European cars often have great seats but I'm not inclined in that direction. Check out the VW Rabbit and similarly sized cars. Volvo too has some amazing seats, at least in some of its cars. The '07 and up Hyundai Elantra has a roomy cabin and a height-adjustable seat. My favorite is the current generation Scion xB. While it's predecessor was a noisy, thrifty (small engined) little thing with loads of headroom, the new one is related only in name and general shape. Think of it as the cross-over version of the Camry. It has height-adjustable seats and even more headroom than the Elantra. Side note: the Rabbit, Elantra, and xB are also very quiet, in terms of their tested sound levels when cruising at 70mph. So is the new Civic (non-EX, non-Si models), but I have not evaluated it's seat. I hope that this helps someone! The Sienna features three separate seats across in the second row, any one of which can be removed as needed. The seats are each wide enough for a carseat making it possible to have three carseats in the second row, an option very difficult in most minivans. If you remove the center seat the aisle to pass back to the third row is roomy enough for an adult to not bash their hips getting by.
Honda Odyssey
Offers an 8-seat option but the center seat is very narrow and does not have LATCH. If you take it out, you are still left with only a narrow access to the third row seat, which can be obnoxious for adults who have to climb back there and help kids buckle seats.
Kia Sedona
Kia is the cheapest 8-passenger minivan option. The center seat is narrower like the Odyssay.
Past models that offered 8-seat options: Chevy Venture& Pontiac Montana. The Montana offered 8 seat configuration, which consisted of a bench seat in the second and third rows. The Venture had a second row arrangement of three bucket seats that could all be removed for different configurations. The only problem was the middle bucket seat had no shoulder belt making it impossible to seat three kids in booster seats in the second row.
