Race cars run a different grade of fuel than a normal passenger car so this is common. You have to really soop up a normal car engine for this to happen on a normal car.

It is supposed to only do this at a higher temperature but if the engine is constantly cold it will be running a rich mixture of fuel, causeing the mileage to be extremley poor. This thermostat should not be an expensive fix and i would suggest looking into the situation as I have seen it before.
Not having anymore info. other than it was in a rollover, the engine head could be cracked and allowing coolant to get into the combustion chamber which could explain smoking at start up and after the engine is warm. Check your coolant tank for any oil residue - if there is oil in the tank, you've got a engine head problem and your best bet is to get a new head after verifing that the block isn't also damaged.

I don't know if this is your trouble, but I had the same situation or similar.It was explained to me that the exhaust manifold on maxima's have a tendency to heat up and warp; separating them from the engine exhaust ports and the bolt breaks. I think you need to replace the exhaust manifold. It is a bit expensive having a professional do the job. Well worth the cash. At least to me.
