Let me guess. You have power steering, right? When you turn the wheel all the way to the lock, the power steering pump is still trying to turn it further, which is why the steering feels jerky. You can blow up the pump, or a hose, by holding the wheel against the lock. You won't turn any wider if you let the wheel come back one quarter turn, but you will take the pressure off of the pump.
I would check the suspension bushings, if one of them is worn it would cause a knocking noise.
Check the power steering fluid to make sure it is full. If it is full the power steering pump is going bad.

Detach tie rod end from knuckle, remove ABS sensor (this is very tricky, they stick) Remove control arm from knuckle, Now undo large nut holding hub and drive axle and pull hub off. Now remove the 3 bolts holding bearing assembly. Replace in reverse order.
-This job is quite tricky if you are not a very experienced mechanic - I would highly recommend getting the Haynes manual .
